For over two centuries, Oka Naosaburo Shoten has crafted soy sauce with a philosophy that pairs evolution with the preservation of tradition. Central to this is wooden-barrel fermentation—now used by less than one percent of Japan’s producers. Cedar barrels hosting lactic acid bacteria, yeast, and koji form a living microbial ecosystem that stainless steel can never replicate, shaping the depth and aroma of our soy sauce.

At FOODEX, visitors can experience this craft through the ingredients, koji, moromi mash, and slow maturation process. A highlight is the distinctive aroma created as koji transforms soybeans and wheat into amino acids, producing layered fragrances reminiscent of wine terroir. Choko established the industry’s first union in 1941 with the aim of joint production and joint sales by 29 soy sauce brewers that have protected goodwill for a long time. After many changes, we are manufacturing as “Choko Shoyu Miso Cooperative”. In 1947, the sales department was separated and “Choko Shoyu Co., Ltd.”
Since its founding, We the Choko Group have carefully preserved the traditional brewing technology of soy sauce and miso, which is the origin of Japanese food, and promoted the commitment to raw materials, thorough strict quality control, and the introduction of state-of-the-art equipment, soy sauce as a food manufacturer. Teraoka organic brewing has specialized in producing organic soy sauce and Japanese seasonings in Hiroshima since founded by Goichi Teraoka in 1887. We have 2 factories, Kamura factory and Matsunaga factory. Especially KURADASHI soy sauce is the only soy sauce produced at the Kamura Factory. The secret of its soy sauce is the natural microorganisms of more than 135 years traditionally used for fermentation and maturation. It creates rich and complex flavors. At Matsunaga Factory, we are constantly challenging ourselves by developing new products and introducing new technologies to deliver more products to our customers. Today, our products are available in more than 20 countries around the world. We will continue to develop and propose products that are loved in many countries. Our manufacturing processes are controlled according to JAS (Japanese Agricultural Standards). After the registered organization certifies that the product is organic, we can label our products with the "Organic JAS" logo. In October 2024, Teraoka Yuuki Jyouzou (both Matsunaga and Kamura Factories) achieved certification for FSSC 22000, one of the most stringent international food safety standards.

Since our founding in 1950, we have dedicated ourselves exclusively to brewing white soy sauce in Hekinan City, Aichi Prefecture—the birthplace of white soy sauce. Unlike regular soy sauce, white soy sauce is primarily made from wheat, enhancing the vibrant colors of dishes while adding rich umami flavor.
