1. Commitment to Ingredients: We produce additive-free seasonings using mainly local Kyushu ingredients and domestically produced produce. The fruit juice used in our ponzu sauce and other dishes is freshly squeezed, and the vegetables used in our dressings are fresh and in season, sourced directly from local farmers and added at their most delicious. Our dashi stock is carefully made using traditional methods handed down from ancient times, using kelp from Hokkaido and vegetable stock from Kyushu.
2. Commitment to Soy Sauce: A sweet soy sauce unique to the Kyushu region. Our soy sauce is matured using whole soybeans and wheat from Fukuoka Prefecture using a method known as double-matured soy sauce, resulting in a rich, umami-filled re-brewed soy sauce that is perfect for sashimi and sushi. ③ Traditional manufacturing methods only a long-established company can offer Founded in 1913, our company uses a manufacturing method that has been passed down since the time of our great-grandfather, and by taking time to ferment and mature our products, we continue to produce products with a good balance of aroma, richness, and aftertaste.
