We are Japan's only producer of white soy sauce and white dashi broth certified organic under JAS standards.
Since our founding in 1950, we have dedicated ourselves exclusively to brewing white soy sauce in Hekinan City, Aichi Prefecture—the birthplace of white soy sauce. Unlike regular soy sauce, white soy sauce is primarily made from wheat, enhancing the vibrant colors of dishes while adding rich umami flavor.
We are also the original brewery of white dashi stock. Our white dashi, blending organic white soy sauce with carefully selected domestic dashi stock, can be diluted to create an authentic dashi base suitable for Japanese, Western, and Chinese cuisine.

It can be used as a secret ingredient in various dishes such as udon broth, oden stew, chawanmushi steamed egg custard, dashimaki tamago rolled omelet, ramen sauce, pickles, pasta, and dressings. -

Japan's only JAS-certified organic white soy sauce. Crafted in Hekinan City, Aichi Prefecture, the birthplace of white soy sauce.
Unlike regular soy sauce, it is made with a ratio of 90% wheat and 10% soybeans, resulting in a light amber color.
Furthermore, while standard soy sauce ages for 3 months, ours undergoes low-temperature, long-term aging for over 6 months in a year-round refrigerated cellar. This process preserves its pale color while developing a deep, complex flavor profile and natural sweetness.
To retain the rich aroma of white soy sauce, we deliver it unpasteurized as “raw soy sauce.”
We encourage you to try it not only with Japanese cuisine but also with Western, Chinese, and various other dishes.

Usage Scenes(Usage/Recipies)
For soup: Dilute 16 times with hot water.
Udon: Dilute 10 times with hot water. (It will be more profound if you dilute it with dashi.)
Chawanmushi (steamed egg custard): 3 eggs, 2 tablespoons of white dashi, 2 cups of water. Add ingredients of your choice and steam to complete the dish.
Fried Chicken: 300g of chicken meat, 1 tablespoon of white dashi, and then cover with katakuriko (potato starch) and deep fry to complete. -
