Aridaya was founded in Annaka in 1832. For over 190 years since then, we have continued to craft soy sauce using traditional natural fermentation methods. While preserving our traditional flavor, we continually pursue new endeavors, passing down the taste of Aridaya soy sauce to the present day.
This time, we introduce our main product, naturally brewed soy sauce, along with other items like our smoked soy sauce, made using a patented Japanese production method.

Usage Scenes(Usage/Recipies)
For meat dishes: Steak, BBQ, grilled meat. Its rich texture clings to meat fibers while enhancing the meat's savory flavor.
For fish dishes: Dip sashimi or sushi in it to draw out the ingredients' flavors more deeply. (Especially good with fatty fish like yellowtail or tuna, or ingredients with strong flavors.)
As a secret ingredient: Add just a little to stews or simmered dishes at the end for a deeper, more complex flavor.
Of course, it also works as a base for ramen sauces. -

Aritaya's koikuchi soy sauce undergoes two years of aging before becoming a finished product. Saishikomi soy sauce is made by adding soybeans and wheat to this dark soy sauce and fermenting it once more.
Compared to standard koikuchi soy sauce, it offers a richer, deeper flavor with enhanced umami.
It has a thicker consistency and more intense flavor than dark soy sauce, making it ideal for highlighting the taste of ingredients or pairing with fatty foods.

Smoked Naturally Brewed Soy Sauce is a product that combines Japan's traditional fermented culture with Western smoking techniques. It is made using Aritaya's proprietary smoking method (patent obtained) on a base of dark soy sauce aged for two years in Aritaya's stone cellars.
By blending the rich umami of dark soy sauce with a deep, smoky aroma primarily from cherry wood chips, it creates an exquisite harmony of profound depth and fragrance.
The smoky aroma also adds a dashi-like flavor, making it recommended for vegans.
