For over 120 years, Hakusui has produced fish surimi and fish paste products using fresh, domestically sourced fish from local markets in Japan. At our booth, we introduce our history and craftsmanship, from surimi to finished products.

The main fish we use is Eso, a white-fleshed fish known for its clean taste and rich umami. All processes, from fish preparation to surimi production, are carried out in-house. Careful control of freshness and temperature ensures a smooth, refined texture.

Our surimi is used by fish markets, restaurants, and institutional food services, mainly in Fukuoka and Tokyo, and our products are sold at retail stores such as train stations and airport shops.

Hakusui is committed to sustainability. Our additive-free fish sauce, made only from fish scraps and salt, received the Minister of the Environment Award. We also reuse underutilized fish to reduce food waste.

We also present BOKOMEN, a gluten-free noodle made from fish surimi, suitable for ramen, udon, and pasta.
