Yamadaya Co., Ltd. is a confectionery company with over 150 years of history in Ehime, Japan. At this exhibition, we present our signature “Yamadaya Manju” and our premium sweet red bean dessert, “KIRA – Meisui Shiruko,” showcasing the harmony of tradition and innovation.
Yamadaya Manju is known for its exceptionally thin outer layer and smooth, refined red bean paste. From the careful selection of azuki beans to precise control of texture and moisture, we pursue a delicate melt-in-the-mouth experience. Our craftsmanship preserves time-honored techniques while meeting modern quality and safety standards.
“KIRA – Meisui Shiruko” is crafted with pure spring water from Ehime and carefully selected azuki beans. Designed with a lighter finish and balanced sweetness, it appeals to a wide range of customers, including international markets. Its shelf-stable format also supports global distribution.
At our booth, we will introduce our commitment to ingredient quality, texture control, packaging design for overseas markets, and collaboration opportunities. We aim not only to share traditional Japanese sweets, but also to expand the global appreciation of azuki bean culture.

Evolving Fried Tofu Born from 140 Years of Tradition

At our booth, we proudly present Matsuyama Age, a uniquely crafted fried tofu made possible by a proprietary production method that allows for one year of room-temperature storage, along with our new product, the Frozen Inari Roll, developed from this same technology.

While ordinary fried tofu has a short shelf life, Matsuyama Age can be stored at room temperature for up to one year. By slicing tofu to approximately 3 mm, compressing it to remove moisture, and carefully frying it in canola oil, we achieve a truly distinctive texture—crispy on the outside and soft and fluffy on the inside. It requires no oil-draining and can be used straight from the package, offering exceptional convenience.

At this booth, we also introduce our Frozen Inari Roll, which showcases the rich umami and unique texture of Matsuyama Age. Light and juicy, yet healthy and satisfying, it represents a new style of Japanese cuisine.

Made without chemical additives and using non-GMO Canadian soybeans, our products are safe, carefully controlled natural foods.
