Kayashima Sake Brewing Co., Ltd., founded in 1873, is led by a young brewing team averaging in their thirties. Blending tradition with a willingness to innovate, the brewery creates sake that is lively yet rooted in harmony.
The guiding philosophy behind the signature brand, “Nishi No Seki”, is to craft a sake that local people love—one that complements the foods of the region. In particular, they aim to produce a “supporting actor” of a sake that pairs with Kyushu’s sweet and savory dishes, enhancing the meal without overshadowing it.
Their brewing style centers around the full flavor brought out by using Kumamoto yeast. They place equal emphasis on “Rice koji” and on a lingering finish. While holding fast to the foundational principles that stand the test of time, they also adapt thoughtfully to changing preferences and values.
These same ideals are upheld at “Kayashima Shurui”, their affiliated shochu distillery. There, they continue refining their craft with “Bungo Seimei,” a mellow barley shochu made using “Rice koji”, and “Kayashima Yonesaburo”, a sweet, fragrant rice shochu with sake-like aromas—each reflecting their dedication to achieve quality and flavor.
