We work exclusively with top-grade Australian raw honeys—especially medicinal Manuka—sourced by specific floral regions to express clear provenance and terroir. Honey is selected like grand cru fruit, then fermented slowly at low temperatures with our own yeast to preserve purity and aromatics. Extended lees aging (and occasional bottle aging) builds texture, depth, and balance. The result is a range of dry honey wines with low residual sugar, precise aromatics, and a clean finish.
