Aurum’s unique selling proposition is its refined expression of premium Australian Manuka honey in a dry, umami-driven honey wine style. Sourced from pristine bushland through sustainable partnerships with beekeepers, each cuvée reflects clear provenance and terroir. Crafted with minimal intervention, slow fermentation, long aging, and extremely low sulphur used only at bottling, Aurum delivers purity, balance, and seamless pairing with Japanese cuisine. Elegant packaging also positions Aurum as a high-value gifting proposition.

Country / Region AUSTRALIA
Exhibited products Aurum Modern Honey Wine is an Australian producer of ultra-premium honey wines, based in Byron Bay. We work exclusively with top-grade Australian raw honeys—especially medicinal Manuka—sourced by specific floral regions to express clear provenance and terroir.

Honey is selected like grand cru fruit, then fermented slowly at low temperatures with our own yeast to preserve purity and aromatics. Extended lees aging (and occasional bottle aging) builds texture, depth, and balance.

The result is a range of dry honey wines with low residual sugar, precise aromatics, and a clean finish. Elegant and umami-driven, Aurum is crafted for fine dining and pairs naturally with modern Japanese cuisine. Bridging fine wine and fermentation science, Aurum redefines honey wine as a serious, cellar-worthy category for discerning global markets.
