Exhibition Introduction
We are pleased to present our Kosher-, Halal-, and Vegan-certified range of products, including non-alcoholic beverages featuring yuzu and other natural ingredients, red rice vinegar, Japanese sake, and yuzu and plum liqueurs.
In addition, we will showcase scientifically based pairing proposals of nigiri sushi made with red rice vinegar and Japanese sake, as well as innovative mocktail recipes, all developed with a strong foundation in scientific research.

This red vinegar is made using 100% sake lees from Junmai Daiginjo brewed with Yamada Nishiki rice, produced by our sake brewing division.
The sake lees are aged for over three years, then blended with Junmai sake brewed by the same division, and fermented and matured for more than 120 days in a 30-koku large wooden vat.
It offers deep umami, richness, and a mellow acidity unique to sake-based red vinegar.
Awarded at the “Seasoning Championship 2016” hosted by the Japan Vegetable Sommelier Association.
This product is Kosher and Vegan certified.
