The story of the ever-evolving “Junmai Daiginjo Tedukuri Shichifukujin.” This is the quintessential light and dry long-seller.
A junmai daiginjo sake brewed using the sake rice “Gin Ginga,” resulting in a crisp, dry finish without any lingering sweetness.
“Junmaidaiginjo Tedukuri Shichifukujin” is one of our brewery's flagship products. Pioneering the market in 1966 when commercially available daiginjo sakes were scarce, it has enjoyed long-standing customer loyalty as a perennial favorite. We have continuously refined it to meet changing times and deliver ever-greater quality.
Crafted with “Gin Ginga” rice, it undergoes careful low-temperature aging and pressing, then undergoes a single pasteurization before being bottled unfiltered. Its crisp, dry flavor pairs well with simple dishes, making it a popular “Pure Rice Daiginjo Sake for Dining.”

Because it's alive, it conveys something special.
Rice washing, steaming, koji making, yeast starter, mash...
We deliver it all in its natural state.
Sake brewed over a month or more. Seeing and tasting the finished sake after pressing the moromi.
That moment brings irreplaceable emotion and joy to the brewers.
At Kikunotsukasa Brewery, driven by the desire to “share that moment with as many customers as possible,”
we released the unpasteurized sake series “innocent.”
