Full lifecycle management—from reproduction and nutrition to health monitoring—ensures exceptional roe quality in a pristine, non-urban environment with crystal-clear artesian waters. Only mature female sturgeons from our farms supply the roe, processed under strict supervision by ichthyologists and food technologists in state-of-the-art facilities adhering to global hygiene standards.

Exhibited products Antonius Caviar offers three premium varieties, each sourced from sturgeons bred at Poland's Gosławice fish farm with over 50 years of expertise.

Oscietra derives from Russian sturgeon (Acipenser gueldenstaedtii), featuring pearls of 2.9-3.5 mm in diameter. These exhibit intense, nutty flavors in shades from light grey to golden, crafted fresh and unpasteurized using traditional methods for connoisseurs.

Siberian comes from Siberian sturgeon (Acipenser baerii), with pearls measuring 2.6-3.2 mm and intense notes in black to light brown hues. Optimal farming in Warmia's crystal-clear waters ensures exceptional quality through rigorous roe selection.

Bester is an exclusive albino hybrid of Beluga and Sterlet (Huso huso x Acipenser ruthenus), rarer than typical Sterlet albinos. Its small, soft, creamy-white to yellow pearls deliver a unique buttery taste, preserved via our unique production processes.
