Oscietra derives from Russian sturgeon (Acipenser gueldenstaedtii), featuring pearls of 2.9-3.5 mm in diameter. These exhibit intense, nutty flavors in shades from light grey to golden, crafted fresh and unpasteurized using traditional methods for connoisseurs. Siberian comes from Siberian sturgeon (Acipenser baerii), with pearls measuring 2.6-3.2 mm and intense notes in black to light brown hues.
