Choya Umeshu showcases the “The CHOYA” series, crafted with 100% domestically grown Japanese ume and produced without acidulants, flavorings, or colorings. At our booth, visitors can enjoy tastings of our internationally acclaimed premium umeshu. The highlight this year is The CHOYA AGED 3 YEARS EXTRA FRUIT, winner of the Best in Show award at the SFWSC 2024, offering a deep, refined expression of long‑aged umeshu.

Made with 100% ripe Nanko-ume fruit from Kishu.
We do not use artificial additives such as acidulants, flavourings or colourings. By adding micro powder of the real Ume seed and blending it with the same ingredients except alcohol, we achieve the taste like the authentic Umeshu. Finished with organic blue agave syrup for a refreshing and gentle sweetness.
This non-alcoholic Ume soda was created for those who don’t like alcohol or who do not wish to feel tipsy yet wouldn’t mind to enjoy the real thing. Enjoy in a variety of situations!

CHOYA Utage is a true masterpiece among CHOYA range.
Together with Ume farmers we grow the highest quality Nanko-Ume fruit in optimal soil conditions in the renowned Kishu region. Later, through a process we call Still Ageing we steep the fruit, slowly and deliberately, for 5 years in specially designed storage tanks that protect against external influences such as light, temperature, and air. By aging for extra years, CHOYA Utage is able to obtain its rich flavors with elegant aroma and tartness that fills your mouth.

This Umeshu is aged for at least 1 year and later infused with French brandy. The fragrance of brandy instantly spreads throughout the mouth, with a strong Ume flavour that comes later, and a firm aftertaste.

We mature this unique Umeshu for 3 years before aging in French oak casks for another 2 years. Rich and complex flavors, with notes of almond from the pit and flesh of the Ume fruit, and a smoky and luxurious bouquet from the cask.

At least 2L-sized large and thick Nanko-ume fruit from Kishu are slowly steeped in cane spirit with sugar for about a year. With a very soft flesh, the macerated fruit are characterized by its rich aroma and delicious tart notes.
