Together with Ume farmers we grow the highest quality Nanko-Ume fruit in optimal soil conditions in the renowned Kishu region. Later, through a process we call Still Ageing we steep the fruit, slowly and deliberately, for 5 years in specially designed storage tanks that protect against external influences such as light, temperature, and air.
