At Foodex, the Blue Marlin stand represents the authentic excellence of Italian seafood, with a special focus on Sardinian grey mullet bottarga, our flagship product. Made following a traditional process and naturally cured, this bottarga expresses the unique balance created by the Mediterranean microclimate: clean sea waters, constant winds, and ideal humidity. The result is an intense yet elegant flavor, firm texture, and unmistakable aroma that make Sardinian bottarga a benchmark of quality worldwide.
Alongside grey mullet bottarga, Blue Marlin presents a carefully selected range of premium products: tuna bottarga (karasumi) with a deep and structured taste; Mediterranean sea urchin roe, prized for its natural sweetness; cuttlefish ink, pure and aromatic; and innovative blue crab specialties, including pulp, cream, and sauce, designed for modern and versatile cuisine. The selection is completed by smoked grey mullet fillet, delicately processed to preserve its marine character.
