To make wild venison safer and more delicious to eat, Mie Prefecture has established the "Mie Gibier Food System Hygiene and Quality Control Manual" and the "Mie Gibier Food System Registration System." Wild venison captured within the prefecture and handled by businesses registered under the registration system in compliance with the manual throughout all processes, from capture to butchering, processing, and cooking, is designated as "Mie gibier."
"Mie gibier" is not only safe, but also of the highest quality.
