This vinegar, originating in Japan and made from long-aged sake lees, was widely enjoyed as a staple of Edomae sushi. In recent years, it has become known for its use in high-end sushi restaurants. It is characterized by its mellow acidity and strong umami flavor.
This product
(1) uses Akazu vinegar made from aged sake lees, which gives the rice a nice color
(2) has an even more rich, umami-like flavor.
