Domestically grown daikon radishes are braided with thin cords, hung from the ceiling, and dried with a pleasant aroma using broadleaf wood. They are pickled mainly with rice bran, salt, and sugar, and the cold air with falling powdery snow enhances their flavor. This is a rustic-tasting takuan that evokes memories of old irori (hearth) fires. We are committed to natural flavors and do not use preservatives, colorings, or seasonings (such as amino acids).
