The “merveilleux au chocolat” is a delicate, cloud-like French dessert born in the North of France in the 1940s, not far from our worshop in Arques. Two crisp, airy meringues are sandwiched together with a silky chocolate ganache, then generously coated in the same luxurious ganache before being rolled in fine chocolate shavings. Each bite melts instantly on the tongue, offering a contrast between the subtle crunch of the meringue and the softness of the cream.
