    We use the blood meat of bonito caught by MSC-certified pole-and-line bonito fishing boats.
    The blood and lean parts of bonito are minced and mixed with homemade soy sauce koji and onions to make menchi-katsu.
    The blood meat of bonito has a strong smell, but marinating it in homemade soy sauce koji reduces the smell, making it especially recommended for people who don't like fish.
    The blood meat of bonito is rich in iron* and is effective in preventing anemia, and the enzymes in the koji tenderize the meat and improve the intestinal environment, leading to "intestinal activity."
    Since it's pre-cooked, it only requires heating in the microwave, and since it's bite-sized, it can also be used as a side dish for your lunch box.
