    We use bonito caught by MSC-certified pole-and-line bonito fishing boats.
    Each bonito is seared by hand and then marinated in homemade soy sauce koji, which reduces the bonito's distinctive smell and allows you to enjoy the fragrant aroma and natural flavor of the fish.
    "Bonito tataki with soy sauce and koji" brings out the umami unique to soy sauce more than "Seared bonito marinated in salted rice koji," so it is especially recommended for people who don't like fish.
    What's more, the enzymes in the koji tenderize the meat and improve the intestinal environment, leading to "intestinal activity."
    While seared bonito is usually eaten with ponzu sauce, you can also enjoy it as is as it has the saltiness of soy sauce. We also recommend pairing it with condiments.
