We use bonito caught by MSC-certified pole-and-line bonito fishing boats.
Each bonito is seared by hand and then marinated in homemade salted rice koji, which reduces the bonito's distinctive smell and allows you to enjoy the fragrant aroma and natural flavor of the fish.
You can enjoy a balanced combination of the rich flavor of the bonito, the saltiness of salted rice koji, and the fragrant taste.
What's more, the enzymes in the koji tenderize the meat and improve the intestinal environment, leading to "intestinal activity."
While seared fish is usually eaten with ponzu sauce, this one is already salty, so enjoy it as is. We also recommend pairing it with condiments.
