Pecorino Sardo Maturo PDO: LAIT’s Pecorino Sardo Maturo PDO is a versatile aged cheese with a compact texture and pleasantly tangy flavor. Young, it is soft and delicate; as it matures, it develops greater structure and depth of flavor. Perfect as a table cheese or for grating, it enhances all kinds of dishes. Made from 100% Sardinian sheep’s milk in full compliance with PDO regulations. Pecorino Camedda: Aged Pecorino cheese with a dense, white paste. Minimum aging: 90 days. Cylindrical with a smooth surface, 16 cm in diameter, 10–12 cm in height, weighing 2.7–3.5 kg; rind smooth and black.
