We use bonito caught by MSC-certified pole-and-line bonito fishing boats.
After the bonito is landed, it is processed at our own processing plant adjacent to the port, flash-frozen in ethanol at -30°C, and then stored in an ultra-low temperature freezer at -60°C.
Because we use freezing technology that maintains a high level of freshness, even after thawing, you can enjoy the texture and flavor of freshly caught bonito.
It can be used as sashimi, as well as in a variety of other dishes.
