    Our carefully selected Norwegian mackerel, rich in flavorful fat, is marinated in a mellow rice vinegar sourced from a brewery in Kagawa, Shikoku with over 200 years of history. This vinegar undergoes a slow fermentation and aging process.
    The result is a delicious marinated mackerel that is rich in flavor yet light to eat, where the fat transforms into savory umami.
