It is an Extra Virgin Olive Oil obtained from a selection of the best olives harvested before December 31st and milled in our olive mill just a few hours after being harvested to preserve all the properties and aromas of the fruit. This EVOO is produced under particularly thermal conditions that do not modify the oil and that have not undergone any treatment other than washing, decantation, centrifugation and filtration.
