The defining characteristic of our sake brewing lies in our commitment to Japanese terroir as a brewery situated in the Shonai region of Yamagata Prefecture.
This SAKE uses only the latest rice variety developed by Yamagata Prefecture, “Yukiwakamaru”, harvested in this region, “Chateau-Shonai”.
The brewing water is exclusively the underground water from Mount Chōkai.
We brew our sake using our own unique brewing techniques, passed down for 150 years.
Eau-de-vie shonai Co., Ltd., a sake brewery, has crafted a new sake (nouveau) using this ‘Yukiwakamaru’ rice.
This freshly pressed new sake, limited to just 1,000 bottles, is named ‘Eau de Vie-Nouveau’ and we are delighted to present it to you.
