Perilla oil is a highly aromatic oil valued for its nutty, herbal flavor and functional benefits. It is widely used in Korean and Japanese cuisine, particularly for light cooking and finishing applications where its fragrance can shine.

In the kitchen, perilla oil is suitable for sautéing and pan-frying at moderate temperatures, and is best used as a finishing and seasoning oil. It is commonly drizzled over cold buckwheat or soba noodles, often paired with soy sauce, seaweed, or sesame-based seasonings. Perilla oil is also used in vinaigrettes, grain bowls, and fresh salads, as well as for seasoning vegetables such as namul or enriching soups and broths. In Korea, it is traditionally brushed onto roasted seaweed (gim) to enhance aroma and flavor.
