    This is a “double-fermented soy sauce,” a very luxurious soy sauce made by adding koji again to raw soy sauce pressed from whole soybeans, then fermenting and maturing it twice. It uses twice the ingredients and twice the fermentation time.

    This soy sauce is produced by a member brewery of the Kioke Shoyu Export Facilitation Consortium — a group of producers working together to preserve and promote the craft of traditional wooden-barrel brewing for the next 100 years.
