| Special Remarks | Marmorosso (RedMarble) draws inspiration from the japanese culture of wabi-sabi and its ideal of imperfect beauty in particular from the art of Kintsugi. The pearly fat of our cured hams becomes a metaphor for these golden cracks conveying a superior aestethic and taste. We wanted to honor and highlight the most important element of our cured meats: the fat, just as gold is in ceramics. |
