This premium buckwheat flour is carefully crafted using select unhulled buckwheat sourced from across Japan—most notably Hokkaido—including rare organic varieties. It is milled using two methods: traditional stone grinding and mechanical milling.
Stone grinding, a slow and heat-free process, preserves the natural aroma and rich flavor of the buckwheat, including the subtle umami from the seed coat. In contrast, mechanical milling offers stable quality and high-volume production, making it ideal for commercial use.
Our buckwheat flour is known for its rich aroma and robust flavor. It has a moist texture with just the right amount of stickiness, making it suitable even for 100% soba (juwari soba) noodles.
