Using naturally filtered underground water from Mount Fuji—purified over more than 100 years—and the traditional techniques of the Noto Toji master brewers, we craft our sake with great care.
Sake brewed with the soft Fuji spring water is characterized by a smooth texture and rich umami.
“Takasago Yamahai” is created through the collaboration between the native microorganisms that live within our brewery and the blessings of Mount Fuji’s ultra-soft underground water.
By utilizing the natural microorganisms present in our kura, we employ the traditional Yamahai method, which requires a long fermentation period to carefully develop the yeast starter (shubo).
Sake brewed from this starter develops a distinctive house character while fully expressing the natural flavors of the rice.
For over 190 years, Takasago has preserved these techniques and flavors, continuously refining its unique style together with the pure underground water of Mount Fuji.
