The natural fermentation methods we use combine Japanese tradition with Danish legumes and a twist of innovation. Ingredients are clean and simple: beans, seaweed, water, salt and fermentation cultures.

The result is somewhat similar to shoyu and miso – and can be used accordingly - while savouring and expressing the Nordic terroir, creating unique taste experiences.
